I been cooking since 10 years old and I was like you my cooking sucked until I was actually in high school culinary when I finally taught myself a sense of a taste. I’ve only been doing this for 8 months

In my humble opinion, your food is much better than big time chef’s I’ve work with and for. Your able to come up with new recipes all the time just like myself I do the same. Even if it small, it’s a big deal.

Tell me if I am wrong, but when you’ve looking at ingredients and coming up with ideas, you’ve really just seeing if the ingredient or just this idea for a recipe is going to work? am I wrong? or is it along the lines?

Your the first Foodblogger I actually looked at, and Pat Flynn was my first podcast your my second haha

When I saw your pug on your about me I was more comfortable since I love my Jack russell.

As for you getting excited to seeing new comments and visitors to your site, I totally relate to that
Just like seeing people coming to my site, which is awesome! I jump and do a dance every time someone adds me on G+. Just like today and lied to my co workers saying really excited about the food I am making today.

Just like you I feel uncomfortable all the time doing this stuff, like writing on just in general that’s why I do youtube so I can bring my personally and mood doesn’t change compared to writing.

As for the people that don’t like to hear about you talking about your dog… Cat lovers… >.>

Talent is overrated! You are right it is 10k hours means experience and mistakes that were learned and everything comes together down the line. I don’t know… It’s effortless, you know?

I’ll tell you a story that only my girlfriend knows, back in November I was cooking pasta and I burned the white sauce, I didn’t have much time to reduce another sauce since I am cooking for 400+ googlers, so I know that the chefs that I work with don’t have a sense of taste and the scotched cream which was kinda smokey, which lead to me using liquid smoke that has the same flavor and just comes from burned wood you can imagine what happens next?

The chef’s around me tried it and go; “What’s that flavor I love it ( I am literally trying not to laugh out loud, knowing the fact I am about get away with this) I say this; Oh sorry! Ben can you add liquid smoke to the menu?” The replies were; “Oh Nicolas this awesome paste! the sauce is really good.”

Here is where it gets worse… I ran out of this scotched pasta the googlers love it so much. I know this terrible… but hey turned into awesome story to tell!

My last comment is this,the secret is… in my humble opinion No one can be you, how you think, how you talk. The only thing that holds you back is yourself.
